Damafro 3-cheese and Chicken Spaghetti

P'tit Saint-Damase Damafro
A cheese with real character. The very first washed-rind soft cheese made in Quebec!

INGREDIENTS
  • 1 box of spaghetti, cooked according to package directions
  • 6 chicken thighs, or other chicken part, cubed
  • 4 spring onions, finely chopped
  • 6 garlic cloves, finely chopped
  • 1-8 oz package of mushrooms, minced

    Cheese Sauce
  • 60 g or 1/2 of a Damafro Chèvre des Alpes
  • 90 g or 1/2 of a P'tit Saint-Damase, cut in pieces
  • 90 g or 1/2 of a St-Paulin, grated
  • 2 cups 15% cooking cream
  • Salt and pepper to taste PREPARATION
    In a large skillet over medium-high heat, cook chicken in a bit of oil, about 10 minutes. Add spring onion, mushroom, and garlic. Continue cooking, stirring constantly, approximately 5 minutes.

    Deglaze with cream, and slowly add cheeses, stirring constantly until mixture thickens to a rich and creamy sauce. Salt and pepper to taste. Combine with pasta.
